The seniors held their annual Pancake Breakfast on November 14th. Words to describe this event: tasty, fun, delicious, early, yummy, cartoonish, mmmmmgood. The students worked really hard and were able to raise a lot of money for their senior trip. Yay! I was able to buy a basket of American food during the auction. Believe me, that made the day totally worth it! My favorite things in the basket? Diet Dr. Pepper, Cream Soda, and Chocolate Pop Tarts. I don’t know what Matt’s favorite thing is, but I do know that he’s eaten all the Frito’s.
For the first time in 8 years Vienna Christian School fielded a Cross Country Team. The team consisted of only one boy and one girl, but we had a lot of fun and I’m really proud of how they improved over the course of the season.
We weren’t able to run against other schools, so we ran in small races in and around Vienna. The races ranged in length from 4K-6K, and they ran well from the start.
They each placed first in their age group at our first race and never looked back.
I think one of my runners sums up the season quite well:
“Thank you for coaching our cross country team! Even though our team was tiny, we accomplished a lot (with our trophies and medals )…I enjoyed my last cross country season in high school.”
October 30 was the annual VCS Fall Festival which just happened to be my very first PTF event. It was great. Fall Festival is a night of carnival games, singing, and a pie in the face contest. I’m so glad that even though I was in charge, it was still just as much fun as ever. The best part for me has been the contact with new parents as a result of this night. My goal is to get more and more parents involved with the school, and it turns out that having a great event gets them excited enough to ask to be involved. Fantastic! So now I have a few new parents who are ready to help with our next event. Please be praying for this ministry. There are so many incredible opportunities to reach out to families. Our next big event is International Family Fun Night in February. I can’t wait!

Back by popular demand! Here is the fifth in the series of YMCA photos. Sooner or later I’ll be ready for my cameo on the Village People Reunion Tour. I’m also making an attempt to break the record for most diverse collection of tank tops in a series of YMCA photos. Someone call Guinness. Or send me a new tank top. I don’t know how much longer I can keep this up.

The bread of the month for October was Honey Whole Wheat Bread. I again got the recipe from the More-with-Less cookbook. I really do love the simplicity and practicality of this cookbook. This bread is quite good. Not only that, but the house smells amazing when you bake it – it smells like warm honey. Yum! We liked this bread a little better than the No Knead Wheat Bread for it’s versatility. This bread is not nearly as crumbly, so it’s great for sandwiches, toast and whatever else you need bread for. We’ve decided that for our everyday needs, this is the bread to use. However, if we need bread to go with soup, we’ll make the No Knead Wheat Bread because it’s tastier.
Again, I added 3Tbs. of flaxseeds to the recipe. This bread freezes really well, too, so bake away!
Just a note on the mixing: I didn’t use a mixer. I just used a wooden spoon and made sure to really mix it well. It takes a few minutes longer, but it’s a lot cleaner. When I tried it with the mixer, there was stuff flying all over the kitchen. Reason number one to get a standing mixer someday.
Pour warm (not hot) liquid over flour mixture. Beat with electric mixer 3 minutes. Stir in:
1 additional cup whole wheat flour
4 – 4 1/2 cups white flour
Knead 5 minutes, using additional white flour if necessary. Place in greased bowl, turn, let rise until double in bulk. Punch down, divide dough in half and shape into loaves. Place in greased 9×5″ bread pans. Cover and let rise 40-45 minutes. Bake at 375°F (190°C) for 40-45 minutes.
This year we have a new elementary chaplain. Her name’s Melissa, and she is awesome! Each month she’s teaching the elementary students about a specific character trait. For the month of October, the trait was Cooperation. During the last chapel of the month the kids performed skits of different Bible stories that demonstrate cooperation. Then the fifth grade class performed a group juggling act to show how cooperating can allow you to do cool things. Here, see for yourself:
